Smores Rice Krispie Treats

So we moved last weekend.  And we’re just starting to dig out from under the boxes.

And it’s summer time!!  Yay!  We’ve been camping once, are going camping again this weekend, were gone most of last weekend and have been swimming in our new pool.

Did I mention moving?!

I really dislike moving.  I’m sure everyone does.  However, I have simplified my life enormously by giving away things that I haven’t touched in months or years even, and by throwing out things that I just don’t use.

It is freeing, but exhausting.

The payoff is the view from our back porch.  I think we are really going to like it here.

So we’re going camping again this weekend.  The last time we went 3 weeks ago it wasn’t as relaxing as I had hoped.  We rented a trailer and didn’t travel far from home, so as far as camping goes it wasn’t exactly “roughing it” but there wasn’t a whole lot of lounging around time.

I’m hoping for that this time around.

We made Smores around the campfire – of course! – and it was my daughter’s first time roasting a marshmallow over an actual fire and she had such a fun time.  I hope we are making wonderful memories for her.

I found this recipe and thought I would make up a pan to take with us this time.  This way we can have Smores all day long!  It’s almost your average-everyday rice krispie treats, except you add graham crackers to the mix and toast the marshmallows!  Oh, and throw some chocolate on top of course.

Did I mention that I found 4 packages of marshmallows while moving?  FOUR!  Who needs 4 packages of marshmallows??!  What is wrong with me?  Well, one went into this recipe and the other is going with us this weekend.  Problem solved!!

Smores Rice Krispie Treats

  • 5 – 1/2 cups krispie rice cereal (I tweaked this a little and did about 5 cups of cereal and another 1/4 cup or so or graham cracker crumbs)
  • 1/4 cup graham cracker crumbs, plus more for topping if you want
  • 2 or 3 Hershey bars (or other chocolate bars or even chocolate chips if no bars around)
  • 3 Tablespoons butter
  • 1 10 ounce bag of mini marshmallows (or approximately 40 regular sized marshmallows)

Butter or spray with cooking spray a 9 x 13 dish and set aside.

Pour marshmallows onto one or two baking sheets that have been lightly greased or sprayed with cooking spray .  Place under a broiler set to High for a few minutes.  Watch them closely because they go quickly!  Remove when they are toasty brown.  You know the brown I’m talking about…

In a large pot over medium low heat,  melt the butter and then add the roasted marshmallows.  They might stick a little to the baking pans you roasted them in, just do the best you can getting them off.

Stir until they are all melted then add the rice cereal and graham cracker crumbs.  Stir until combined and pour immediately into the greased 9 x 13 pan.

Press the chocolate bars or chocolate chips to the top of the squares so they stick a little.  I actually put mine back in the oven for a minute so the chocolate could melt a bit.  Cause that’s how I like it.  Sprinkle some more graham cracker crumbs on top if you want.

Cut into squares and serve immediately.  Or take camping this weekend!
